Ingredients

  • 2 cucumbers, peeled and sliced 1/4-inch thick
  • 23 medium tomatoes, cut into 1/2-inch cubes
  • 1/2 red onion, thinly sliced
  • 1/4 cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh dill, chopped (optional)

Instructions

  1. In a large bowl, combine the sliced cucumbers, cubed tomatoes, and thinly sliced red onion.
  2. In a small bowl, whisk together the apple cider vinegar, olive oil, sugar, salt, and pepper.
  3. Pour the dressing over the vegetables and toss gently to coat.
  4. If using, stir in the fresh chopped dill.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  6. Serve chilled.

  • For extra flavor, you can add a pinch of dried oregano or a minced garlic clove to the dressing.
